Born in Livorno, Simone discovered his passion for cooking early on, inspired by his restaurateur father.
After training in top Italian kitchens, he explored Michelin-starred restaurants, global cuisines, and television programs—always guided by one principle: respect—for ingredients, people, and the planet.
In 2018, Food & Wine named him one of Italy’s most influential under-35 chefs. His work has been featured in The New York Times, Der Feinschmecker, Gambero Rosso, and more.
At Valle Benedetta Retreat Center, Simone curates the gastronomic vision of our restaurant:

Rediscover the Vegan Roots of Italian Culinary Tradition
This course explores regional Italian cuisine — focusing on dishes that have always been naturally and traditionally vegan.
We’ll revisit a time when resourceful cooking was the norm, and meat or fish were occasional luxuries rather than everyday staples.
Starting from the history of Italian and European cuisine, we’ll look at how post-war influences shaped our eating habits — and highlight many traditional dishes that we often don’t recognize as vegan simply because they’ve always been part of our cultural heritage.

- Are curious to learn how much of our “traditional” cuisine is not so traditional after all

Each participant will receive a collection of traditional plant-based recipes and a small spice and herb kit from our garden.
By the end of the course, you’ll gain a 360° understanding of our gastronomic history — and realize that with just a few ingredients and a little creativity, you can begin crafting your own culinary tradition, entirely plant-based.
