Teacher:

Simone e Alessia

Born in Livorno, Simone Cipriani developed a passion for cooking at a very young age thanks to his father, who was a restaurateur. After his early years of training in Italy's finest kitchens, he went on to work in Michelin-starred restaurants, international kitchens and television programmes, always maintaining a clear guiding principle: respect for raw ingredients, people and the planet.
In 2018, he was named one of Italy's most influential chefs under 35 by Food & Wine, and his work has been featured in publications such as the New York Times, Der Feinschmecker, Gambero Rosso and many others.
At Valle Benedetta Retreat Centre, Simone oversees the identity and gastronomic vision of our restaurant: an ethical, plant-based cuisine that promotes well-being and nourishes by valuing seasonality and respecting the earth.

Alessia Biagiotti is a yoga teacher and naturopath.

After graduating in law and working with leading law firms in Italy and abroad, and completing a master's degree in HR, she decided to devote herself to her passion, her Dharma, yoga.

Today, she is an internationally certified yoga teacher and a graduate student in naturopathy at the Italian School of Holistic Medicine in Milan. She teaches at numerous yoga centres and schools and is the holistic view and event manager of Limbo Festival, a transformational festival held at Tenuta il Ciocco in Tuscany.

Cooking class with Simone Cipriani

An immersive experience of yoga, breath, and seasonal plant-based nourishment

March is a threshold.
Light becomes clearer, the air stirs, the earth prepares to awaken.

It’s the perfect time to lighten, reactivate, and nourish body and mind—letting go of what weighs us down and making space for new vitality.

This retreat weaves together yoga, breathwork, deep relaxation, and natural plant-based cuisine in a journey of purification and regeneration.
It gently supports the body in this seasonal transition with warmth, awareness, and simplicity.

Saucha” — a Sanskrit word meaning purity — becomes a lived practice:
the simplicity of breath, the clarity of thought, the nourishment that sustains without burdening.

At Valle Benedetta, surrounded by nature, silence, and vibrant flavors, you’ll rediscover a rhythm that invites presence and lightness.

What you'll experience

  • Accessible and energizing yoga sessions, to gently cleanse and awaken the body
  • Breathing and release practices, to dissolve tension and invite mental clarity
  • Deep relaxation (Yoga Nidra) to soothe the nervous system and support rest and digestion
  • Experiential talks on natural nutrition, exploring how food influences body, mind, and emotions
  • Seasonal plant-based cooking class with Simone Cipriani, focused on conscious and nourishing cuisine
  • Moments of silence, nature, and inner listening, to reconnect with your personal rhythm
  • Evening sound journey with Dimitri Grechi Espinoza, guiding integration through sound

Why join

In this season of transition, body and mind need care, warmth, and gentle cleansing.
This retreat will support you to:

  • Release physical and emotional residue, and reawaken your vitality
  • Enhance energy, digestion, and mental clarity
  • Lighten body and mind, and rediscover balance
  • Learn simple daily practices of care and presence
  • Reconnect with the joy of nourishing yourself with mindfulness and simplicity

An invitation to slow down, breathe deeply, and feel at home in your body again.

A gentle and inclusive approach

All practices are suitable for everyone, including those with no prior experience in yoga.

Inspired by the tradition of Ashtanga Yoga in its softest, most mindful form, this retreat focuses on breath and awareness—not performance.

Each session is a space for listening, regenerating, and gently restoring your balance.

What you’ll learn

  • How to awaken energy and lightness in a natural and safe way
  • How to turn food into a practice of mindfulness and self-care
  • How to choose and prepare ingredients that support clarity and vitality
  • How to use the breath as a tool for emotional and mental balance
  • How to bring small rituals of cleansing and renewal into your daily life

Restore balance, presence, and lightness

A weekend to cleanse, lighten, and regenerate body and mind—
letting nature guide the renewal that is already unfolding.
